Frankly, I don't know how you can be confident in your set if you just go to a single company demo day, because they can only fit you in their product. I would highly recommend GolfTec or a pro/fitting center like Club Champion which I know isn't near you. For irons I really like the Mizuno Shaft Optimizer to help find a shaft for you. My biggest tip would be to make sure you like what you get and it feels good. When I get fit, I measure length, lie, shaft flex, shaft weight, etc.

GolfTEC would be next, they do a solid job but fitting isn't the only thing they do so it's a little more dependent on who you get and their knowledge and not all centers have the same level of selection that a Club Champion does. If you're going to be paying for a fitting I'd pay the little extra and do a Club Champion fitting over GolfTEC.
